Ohhh, a salty pie with that flaky, buttery puff pastry?
Now that’s a delicious little plot twist for Our Magic Pie Day.
Here’s a filling that’s rich, earthy, and just decadent enough to make you lick the fork in victory:
Simple Savory Mushroom Pie
Ingredients
- 1 sheet puff pastry
- 1 cup sliced mushrooms (champignons & wild mushrooms)
- 1 small onion, diced or some fresh, chopped garlic
- ½ cup cheese trio (grated parmesan and low-fat cheddar)
- 4 small cubes of brie (optional)
- 1 teaspoon olive oil
- 1 teaspoon fresh greens (dill, parsley, something else, your choice)
Steps
- Filling:
- Sauté mushrooms and onion in olive oil until soft and lightly browned.
- Assemble:
- Lightly oil a baking tray.
- Lay out the puff pastry and cut it into 4 squares.
- Spoon about 2 tablespoons of the mushroom mixture onto each square.
- Add some cheese and one cube of brie onto each square.
- Add the greens.
- Fold each square into a triangle and press the edges to seal.
- Bake (a.k.a. The Drama Scene):
- Preheat the oven to 200 °C / 390 °F.
- Slide the triangles in and bake 5–7 minutes, then—like a stealthy pastry ninja—flip them gently and bake another 5–6 minutes until golden, puffed, and ready for applause.
Survival Tips
- Keep an eye on them like you’re watching the US Open 2025 final—Sinner vs. Alcaraz, or maybe Anisimova vs. Sabalenka—heart racing, eyes glued, every move making your pulse skip. 🎾 Puff pastry is a total diva too: one moment it’s cool and teasing you, the next it’s puffing up dramatically, until it activates the smoke alarm.
- Oil? Two drops only. Brush it so thin the tray just glistens. Puff pastry already brings its own butter party.
- Sautéed mushrooms? Drain the extra water—we want… dry, flavorful filling, not a pastry swimming lesson.
- Cheese will melt into glorious goo, but too much can make the crust go soft and chewy. (Tempting, but resist.)
