During the pandemic, I went wild with eco-friendly cooking experiments: jackfruit burgers, fruit cakes with gelatin, apple pies with ice cream topping, apple cakes, polenta creations, savory pies of all kinds⦠and then I attempted microwave meringues.

Microwave Meringues (Bezele) ā Quick Version
Ingredients:
- 2 egg whites
- 100 g sugar
- A pinch of salt
- ½ tsp vanilla (optional)
Instructions:
- Beat egg whites with salt until soft peaks form.
- Gradually add sugar, continue beating until glossy and stiff.
- Spoon a single dollop onto a microwave-safe plate lined with parchment.
- Microwave about 20ā30 seconds⦠or until it starts plotting its escape.
